Add an additional 2 cups of hot water to soaked beans along with the water it has been soaking in, cook for 30 minutes, add bay leaves , fresh thyme. whole cloves and smashed garlic. In the mean time wash and clean chicken, pat dry and drizzle a little avocado oil onto chicken, season with ½ tsp salt, black pepper, onion powder, garlic powder, smoked paprika, ½ tsp lemon

pepper seasoning and creole seasoning. After 10 minutes, Heat 2 tbsp avocado oil in a large skillet, brown chicken pieces on both sides until you have a nice crust, remove and set aside, add the remaining 2 tbsp avocado oil and brown sausages, in the mean time cut chicken breast into bite size pieces. remove brown sausages from pan, then add onions and garlic and saute for 2 minutes, add bell peppers and carrots, stir well to combine, seasoned with remaining dry seasonings, except for remaining lemon pepper seasoning. Stir well to combine cover and cook for3 minutes. In the meantime, seasoned clean shrimp with remaining lemon pepper seasoning and set aside. Add sausages and diced chicken to the pot, stir and combine well, cover and cook for 10 minutes. If you want to remove some of the tart of the tomato add the sugar, stir well to combine, then add the cooked red beans in and the shrimp stir well to combine and cover and cook for 10 minutes.
