Wash chicken breast ad remove excess fat and any impurities, butterfly chicken breasts being sure not to separate them. After cleaning, pat dry with clean paper towel. In a bowl add all the dry seasoning and mix well to combine, lather both chicken breasts with olive oil on both sides, season with the dry seasoning mix, leaving 1 tsp for later. After chicken breasts are seasoned, on one side lay two slices of tomatoes, same with onions and two mozzarella slices, lay the other side on top, and if you have use toothpicks to secure.

Preheat oven to 350. ( I use a skillet that goes from stove top to oven

Heat avocado oil. On medium heat, brown stuffed chicken breasts for 3 minutes on each side, (being real careful when you flip them), when done set aside, add the potatoes in the same skillet and stir to mix well into the oil and juice from the chicken, add the garlic, butter and garlic chili oil and mix well , cook for about 3 minutes, then separate the potatoes and make room to put the stuffed chicken breasts back in , cover and cook in the oven for 20 minutes, remove and broccoli pieces on top around the potatoes, cover and cook for another 5 minutes, if you would like your broccoli softer then a few more minutes is fine.
