• 4 bone in skin on chicken thighs

In a small bowl combine all the dry seasonings and mix well to combine. Remove excess, fat from chicken, wash with water and white vinegar. Pat dry, drizzle olive oil onto chicken, add dry seasonings mix, leaving about 2 tsps. for later, also add adobo birria marinade, diced onions and bell peppers. Using your hand rub well into chicken. Cover and marinade for at least 1 hour. Heat coconut oil on medium high heat, brown chicken pieces about 3 minutes on each side, be sure to shake off the onions and bell peppers that might be clinging to the chicken pieces. Set brown chicken pieces aside, in the pot, add the onions and minced garlic saute for 2 minutes, then add the carrots, celery and stir well to combine, add the brown chicken pieces, cover and cook for 15 minutes, not adding any liquid, let the chicken cook in its own liquid. Remove chicken pieces, and add washed rice, and butter, stir well to combine, add the green onions and fresh thyme, then layer the chicken pieces on the top add water , cover and cook for 15 minutes, then add the diced zucchinis, stir , cover and finish cooking until rice is cooked, about 10 minutes.
