INGREDIENTS
  • 2 1/2 lb chicken (i uae a mixture of thighs and legs)
  • 1 large onion (sliced)
  • 1 cup sliced bell peppers (assorted colours)
  • 4 clove garlic (minced)
  • 1/2 tsp salt , cayenne pepper
  • 1 tsp black pepper, garlic powder, onion powder, smoked paprika, creole seoning , dried thyme,
  • 1 stick butter (cut into about 5 slices)
  • 1 cup all purpose flour
  • 1 cup chicken broth (low sodium)
  • 1 1/2 tbsp olive oil (divided)
Instructions
  1. Preheat oven to 375. In a small bowl combine all seasoning mix, leaving half of the salt for later. In a small bowl, combine all the dry seasoning and using a fork mix well to combine. Wash and clean chicken with water and lemon juice and remove any impurities, including excessive skin and fat. Pat or air-dry chicken pieces. Pour 1 tbsp of olive oil onto chicken and later well on all pieces, pour the dry seasoning mix onto chicken and using your hand, make sure to rub seasoning well into chicken. . In baking dish drizzle remaining olive oil onto the bottom, add onions, garlic, bell peppers and add remining salt, drizzle 1 tsp olive oil and using your hand mix well, then layer into baking dish well. Slice butter into about 4 to 5 pieces and layer on top of vegetables. Dip chicken into flour and coat one piece at a time, and layer onto vegetables top with butter, after you are done, add chicken broth. Cover with foil and bake for 1 hour, after 1 hour remove and use a large spoon to base chicken pieces. Turn oven down to 350 and put chicken back in the oven uncovered for 20 minutes.
