• 2 lbs boneless skinless chicken thighs

Wash chicken with water, lemon juice and white vinegar, remove excess fat. Rinse and pat dry. Cut into bite size or desired sizes, drizzle 1 tbsp olive oil onto chicken and season chicken with all the dry seasonings including 1 tbsp soy sauce, and 1 tbsp jerk marinade, season well and cover to marinade for at least 1 hour.

Preheat oven to 350 and bake chicken uncovered for 30 minutes, flipping them half way through. Heat the remaining 1 tbsp olive oil in a skillet add, the brown sugar and stir continuously until sugar dissolves, add the diced pineapple and cook for 2 minutes, stirring constantly, add the minced ginger and stir well to combine, add the minced garlic, stir well to combine, add the diced onions and bell peppers, cook for 2 minutes stirring constantly, add remaining 1 tsp jerk marinade and stir well to combine, add remaining soy sauce and oyster sauce, stir well to combine, add hot sauce, honey and white wine vinegar stir well to combine, add water and stir well to combine, cook until you have desired consistency about 6 minutes while stirring constantly.
