DIRECTIONS
Preheat oven to 375, lay washed tomatoes on baking tray, cut the top of the head of the garlic and lay it as well, drizzle 1 tbsp olive oil over them and bake for 45 minutes, when almost done, cook linguini pasta for 7 minutes. Drain saving ½ cup of pasta water, and set aside, ( be sure to run cold water over it to stop it from cooking)In sauce pan add remaining olive oil and ½ tbsp butter to pan, squeeze the roasted garlic in, add the sliced onions and roasted tomatoes, sauté about 3 minutes, Add bell peppers, sauté for 2 minutes, add spinach, add the ½ cup of pasta water, with all the seasonings, add the remaining 1 tbs butter as well, then add the pasta in and stir in well to combine, cook for about 3 minutes
Tip
Roasting the tomato and garlic is optional, but so much better, also if you have time, after roasting you can add them to a blender and liquify. Serve with some grated parmesan cheese.
