  1. Wash chicken in water and white vinegar, remove all excess fat (especially from thighs), check for feathers and remove. Make slices on the skin side of thighs and on both sides of legs Rinse in clean water, drain properly, then pat dry to remove excess water. Add 1 tbsp oil onto clean dry chicken, seasoned both sides of chicken well, making sure to get some in the cuts you make. Using your hands rub the seasonings well into the chicken pieces then add minced garlic, onions and bell peppers and green seasoning and again using your hands mix well to combine. Cover and marinade overnight or at least 1 hour.
