Savory Caribbean Stew Chicken

Remove skin from chicken (optional, trim excess fat. Wash with lemon juice and water. Pat dry in a small bowl combine all the dry seasonings and mix well. Coat chicken with 2tbsp olive oil, and seasoned with all the dry seasonings, minced garlic, fresh ginger, add the tomatoes, bell peppers , onions, green seasonings and soy sauce. Use your hands and rub all the seasonings well into meat. Cover and marinade at least 2 hours. Heat avocado or oil of choice on medium heat, add brown sugar and stir constantly for about 4 minutes until sugar dissolves and turn into a golden brown colour but not burnt. Shake the vegetables off chicken pieces and brown on each side about 4 minutes Do this in two batches ,add the first set of brown chicken pieces on a plate and set aside while browning the second batch. When the second batch is finished, add the first batch back in the pot with add 1/3 cup of hot water and cook for 30 minutes on low, stirring about every 10 minutes , making sure it does not burn or stick. After 30 minutes, add the carrots, potatoes and the vegetables the chicken was seasoned with, add 1 cup hot water in the bowl the chicken was seasoned in swirl it around and add to the pot add the ketchup , stir well, cover and cook for 25 minutes.
