  1. Preheat oven to 350 degrees.
  2. Wash chicken breasts with water and vinegar, remove impurities, excess fat. Pat dry.
  3. In a small bowl combine all the seasoning mix drizzle 1 tbsp olive oil onto chicken and season chicken breasts well on both sides, also with minced garlic lay seasoned chicken breast onto baking sheet, then layer sweet potatoes and carrots, and drizzle with remaining 1 tbsp olive oil. Bake uncovered for 45 minutes , at the halfway point remove and flip chicken , flip sweet potatoes as well, and stir carrots. Heat butter until it melts, add brown sugar and ground ginger, stir well to combine. Drizzle onto the potatoes and carrots.
