INGREDINTS

• 4 lbs. oxtails • 1 lemon • 2 tbsp spicy green seasoning • ¼ tsp salt • 1 tbsp black pepper • 1 ½ tbsp garlic powder • 1 ½ tbsp onion powder • 1 tbsp smoked paprika. • 1 tsp Lawry’s seasoning salt • 1 tsp sazon seasoning • ¼ tsp cinnamon powder • ¼ tsp ground nutmeg • ½ tsp ground all spice • ½ tsp fresh grated ginger • 1 tsp browning mix (can use low sodium oyster sauce, Maggi liquid seasoning • 1 large onion • 1 15 oz can dice tomatoes. • Can butter beans. • 1 tbsp brown sugar • 1 tbsp tomato paste • 1 cup diced uncooked pumpkins. • 1 tbsp cooking oil • 2 tbsp butter (divided 1n1) • 3 cups water • ½ cup red cooking wine • 1 cup low sodium beef broth • 1 large onion dice • 2 green onions (cut in halves) • ½ of red and green bell peppers (sliced) • 4 sprigs fresh thyme • 4 cloves of garlic (minced) • 1 can butter beans. • 3 med size carrots (peeled and cut into desired size

Instructions

Wash oxtail in water with juice from the one lemon, rinse well. Season with green seasoning and all the dry seasoning seasons, as well as the browning or oyster sauce, or liquid Maggi seasoning, Marinade overnight or at least for 2 hours.
