After you have cut the chicken into desired pieces, wash chicken in water with vinegar. In a small bowl, combine all the dry seasonings with green seasonings, brown sugar, minced garlic as well as browning mix. Season chicken well, using your hands to rub the seasoning into chicken. Cover and marinade for at least 1 hour. Heat oil on medium heat, and brown chicken pieces in batches for about 4 minutes on each side until you have desired golden colour. Set aside, when done, if you feel too much oil is in the pan, then remove some, I remove most of it, maybe leaving 2 tbsp. Add chicken pieces back in with any remaining juices from the seasoned chicken, add the ginger, cover, and cook on medium low heat for 30 minutes, stirring constantly. Add the onions, bell peppers, tomatoes, fresh rosemary and stir into combine, cook for 5 minutes, stirring constantly. After 5 minutes, add 1 cup of hot water, the scotch bonnet pepper, and sliced red and green chili peppers. and cook for 30 minutes, then add diced carrots, ketchup and 1/3 cup of hot water, and cook for 20 minutes.
