  1. Heat oil in a skillet, add onions and garlic and sauté for 2 minutes. Add bell peppers, scotch bonnet and tomatoes and sauté another 3 minutes, Add carrots and corn, stir to combine well, cover and cook for 5 minutes, stirring every minute or so, Add butter and when butter melts add cabbage and use a tongue to stir to combine, cook for 10 minutes stirring constantly to make sure does not burn , no need for any liquid ( If you prefer your cabbage on the softer side then go ahead, Personally I like a little crunch to my cabbage ) Add black pepper , onion powder and garlic powder, fresh thyme and scotch bonnet pepper and stir to combine. In the meantime, open corn beef and in a bowl use a fork to break apart. Add corn beef to cabbage and stir well to combine.
